Pumpkin Spice Belgian Waffles

What are you having for breakfast tomorrow? Not sure? Here’s an idea how about pumpkin waffles? I know… another pumpkin recipe but its the last one this year I promise.  This pumpkin spice Belgian waffle recipe is really simple and the adding buttermilk to them instead of regular milk makes for light fluffy waffles every time.  If you don’t have any buttermilk you can add a tablespoon of lemon juice to whole milk and let it stand for 10 minutes before using, or alternatively you can use yogurt instead too.

  • Dry Ingredients:
  • 1C All purpose flour
  • 1.5tsp Pumpkin pie spice
  • 1tsp Baking powder
  • 1/4tsp Baking powder
  • .5tsp Salt
  • Wet Ingredients:
  • 1C Pumpkin puree
  • 1/4C Brown sugar
  • 3Tbsp Melted butter
  • 2 Eggs (lightly beaten)
  • 1C Buttermilk
  • Step 1 Combine all the dry ingredients together into a large bowl.
  • Step 2 Add in wet ingredients and start mixing. While you’re mixing incorporate melted butter make sure the batter is completely smooth with no lumps.
  • Step 3 Scoop 1/2C of the waffle mixture onto a pre-greased, pre-heated (375F of medium heat) waffle iron and bake 3-5 minutes until golden.
  • Step 4 Serve with whipped cream, maple syrup and toasted pecans.
